Fresh Salsa & Egg White Omelet

This recipe is quick, fresh and healthy.  I have this many mornings for breakfast.









Quick & Easy Salsa

4 fresh tomatoes or 1 (15-oz) can of diced tomatoes with juice

1/2 diced red onion

1 diced jalapeno

1 tbsp cilantro

1 tbsp cumin

2 tsp lime juice

1 tsp sugar

salt to taste

Put all indgredients in a container. Cover and put in the fridge 2 hours or overnight.

Varations:    add 1/2 a cup of diced pineapple

 *I never really measure when making a lot of things.  I go by taste and smell, so you can adjust the spices to your taste.


1 c. egg white , ( I never know what to do with the yolk so I buy just egg whites in a carton.)

1/4 c. salsa

1/4 c. cheese, shredded

Salt & pepper to taste

  I use a small cast iron skillet that is well seasoned but a non stick skillet works just as well.  Spray skillet with cooking spray, butter flavored is tasty, and heat on medium.  Pour in egg white and cook till firm. Put salsa and cheese on half of cooked egg white and fold other half over it.  Put it on a plate and “Bon Appetit”!

  1. I always thought of egg white omelet is too dry and plain, I think adding fresh salsa make it more delicious. Thanks for a clever idea.
