What a weekend!

  Hope everyone had a great Memorial Day Weekend ! 

  Rusty and I feel like we have been through war this weekend.  We came home sore , scratched, and bruised. We went to our camp on the river this weekend.  It can only be gotten to by boat.  Right now it takes four forms of transportation to get there.  Truck , boat , foot and ATV.  At times the river is so low that it drys up in certain areas which one of the areas happen to be in front of our camp.   We drive the boat as far as we can, then walk about  a half to three-quarters of a mile to get the ATV with the trailer.  Then drive it to the boat to pick up our supplies.  Well we get to the camp and Rusty turns the fridge on to get cold, we have an old one that came out of an RV and runs on propane.  Comes in handy when we can’t just drive around the corner for ice!  Then he goes to start the generator so he can get the water pump going.  The generators not working right because of old gas.  He gets that running the water pump doesn’t work…..which means carrying water up to flush the toilet and bathing under ice-cold water under the hand pump downstairs.  Thanks to our wonderful neighbors and in-laws they offer their shower.  Thanks again for that!  Well Rusty hits his hand with a hammer that caused a nice sore blister, gets all scratched up and may have gotten into poison ivy while weed eating and I have a black eye. 

  My project this past weekend was to remodel our pantry and Rusty was going to trim it out for me before I painted it.  Well he was taking the glass globe off the light and the screws were rusted in.  I was holding a flashlight on it for him when the sucker came loose and was falling .  I saw all this in slow motion.  Rusty reached out to catch it and it bounced off his hand then bounced off my forehead.  That bitch was so thick, the globe not my head, it didn’t even break when it hit the floor!  It caught me above my right brow.  An egg started forming within seconds.  Rusty grabbed me , made me sit down and ran to the fridge for ice.  I think he actually did run.  He started asking me questions.  Am I dizzy, how’s my vision, seeing stars  etc…  I laid down with ice on my  head and every two minutes he was making sure I wasn’t a sleep or dazed and confused.  He caught me starting to doze off one time.  I told him the what did he expect I was laying in bed under a cool fan.  It was making me want to nap.  He made me use so much ice that I was getting brain freeze!  Well we were getting low on ice which meant him making a trek to buy some.  He tried to get me to go with him and I insured him that I was fine and would not go to sleep.  As soon as he left I got up and started painting.  Got in trouble when he got back because I hadn’t been applying ice and now it looked like I had half a baseball on my head.  Hey I didn’t have to finish painting.  He did it for me just so I would lay down.  The swelling looked like it was going down later that night but the next morning a new developement….. my right eye lid looked like I had applied a really dark purple eye shadow in the crease and I had slight swelling from my hair-line to below my cheek.  In the shape of a perfect oval.  When the first guy at work noticed it and asked me what happened I told him “Well, Rusty and I was trying something new in the bedroom…”  He told me to stop there.  This guy embarrass so easy. I love messing with him.

  Any hoo… got the pantry finished.  Rusty asked me where the light globe was yesterday and I didn’t know.  He thinks I got up in my sleep and made it disappear in the night.  Bad light globe!   Between the dirt, sweat , scratches, bump and bruises I felt like I had been crawling around in a jungle this weekend.  We got home monday around 2:00 and it went like this… unload the boat, eat a fresh tomato sandwich, shower, take a nap.

  I have had the weirdest injuries this year.  Holy cow !  What’s in store for me the next half of the year?  Pulling a muscle in the bottom of my foot doing yoga,  the dead bee incident and now head butting a light globe.  All in all my health is good!  Maybe I should invest in steel toe boots, a padded suit and a hard hat!

    Cajun Fettuccine

    1 1/2 pounds ground beef In a large skillet, cook beef
    1 cup chopped green onions over medium heat until no
    1 medium onion, chopped longer pink; drain and set
    1 medium green pepper, chopped aside. In the same skillet,
    1 celery rib, chopped saute the onions, green
    1 garlic clove, minced pepper, celery and garlic in
    1/4 cup butter or margarine butter until crisp-tender.
    1 tablespoon flour Stir in flour until blended.
    8 ounces plain or Mexican Return beef to the pan. Cook,
    flavored process American uncovered, over medium heat
    cheese, cubed, divided for 15 minutes, stirring
    1 can (10 oz) diced tomatoes occasionally. Add 1 cup
    and green chilies, undrained American cheese, tomatoes,
    1 can (5 oz) evaporated milk milk, and Cajun seasoning.
    3/4 reaspoon Cajun or Creole Simmer, uncovered, for 15
    seasoning minutes, stirring
    8 oz fettuccine, cooked occasionally. Add fettuccine;
    and drained mix well. Transfer to a
    greased shallow 3 qt baking
    dish. Top with remaining American cheese. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees for 15 minutes or until heated through. Yield: 6-8 servings.
