Portabello’s w/ Salsa

If you like Portabellos this is an easy and great tasting recipe.


Large Portabello mushrooms

Your favorite salsa ( I make my own.  Recipe to follow)

Sliced provolone cheese

 Remove the stem (I save them to use in omelets) and scrap the gills out with a spoon. Clean the mushroom off with a damp paper towel.  Rub olive oil on both sides.  Put salsa in the bottom part of mushroom & put the cheese on top and bake in a 350 degree oven till mushroom is tender.  This would do great on a grill too.  Can be eaten on a bun like a burger or as a side dish.  I don’t have measurements on the salsa because the mushrooms all come in different sizes.


Tisha’s Salsa

1 can of petite diced tomatoes

2 T diced red onion

 1 T dried cilantro or fresh to taste

1 T cummin

1 jalapeno diced, like it hot, leave the seeds

sugar to taste.

salt to taste

Mix it all together & put in the fridge for at least 1 hour.  I have added diced pineapple to this too.  The fire of the peppers & the sweetness of the pineapple is great.
